Texas Barbecue Roast


Recipe:

5 lb. French Roast
1 cup Chili Sauce
1 tsp. Salt
1 cup Water
Freshly ground Pepper to taste
? cup chopped Parsley
1 large Onion, chopped
10 oz. bottle of Beer
2 Celery Stalks, chopped

  1. Preheat oven to 325 F .
  2. Remove most of the fat from the roast, wash and pat dry.
  3. Sprinkle with salt and pepper.
  4. Place the meat, fat side up, in a heavy casserole and cover with the onion, celery, chili sauce, water and parsley.
  5. Bake, uncovered, in preheated oven for 1 hour.
  6. Pour the beer over the beef and bake, covered, for 3 more hours or until tender.
  7. Cool to room temperature, refrigerate, skim off the fat, slice and reheat in the drippings.
