Texas Barbecue Roast
Recipe:
5 lb. French Roast1 cup Chili Sauce
1 tsp. Salt
1 cup Water
Freshly ground Pepper to taste
? cup chopped Parsley
1 large Onion, chopped
10 oz. bottle of Beer
2 Celery Stalks, chopped
- Preheat oven to 325 F .
- Remove most of the fat from the roast, wash and pat dry.
- Sprinkle with salt and pepper.
- Place the meat, fat side up, in a heavy casserole and cover with the onion, celery, chili sauce, water and parsley.
- Bake, uncovered, in preheated oven for 1 hour.
- Pour the beer over the beef and bake, covered, for 3 more hours or until tender.
- Cool to room temperature, refrigerate, skim off the fat, slice and reheat in the drippings.
