Yankee Pot Roast


Recipe:

    3 lb. Chuck Roast (lean)
    4 Medium Potatoes
    3 Bay Leaves
    2 cups Water
    5 Carrots
    Salt & Pepper to taste
    2 Medium Onions

  1. Brown beef in hot skillet on both sides.
  2. Turn burner down and add water and bay leaves.
  3. Add salt and pepper to taste.
  4. Cover and simmer slowly for 3-4 hours or until beef is fork tender.
  5. Peel vegetables and cut potatoes in half.
  6. Add to pan, cover and simmer another 30 minutes or until carrots are tender.
  7. Thicken pan juices for gravy.
