Chicken Stew
Recipe:
2 Chickens, cut up1 tsp. Black Pepper
4 Onions, chopped
1 tsp. Tabasco Sauce
1 cup Celery, chopped
1 tblsp. Parsley Flakes
2 Green Peppers, chopped
? cup Green Onions, chopped
2 cups Flour
1 cup Olive Oil
1 tsp. Salt
3 quarts Water
- Brown chicken in olive oil in dutch oven.
- Remove chicken and add flour to make roux.
- Stir constantly until brown.
- Add onions, celery and peppers.
- Cook until soft.
- Add chicken and 3 quarts of water.
- Add seasonings and stir well.
- Let cook until chicken is tender.
- Add parsley.
- Cook for 5 minutes and serve.
