Spicy Veal Roast


Recipe:

? tsp. Salt
? lb. Onions, peeled
? tsp. Black Pepper
? clove Garlic, peeled
? tsp. Cinnamon
2 tsp. dried Tarragon
1 ? tsp. Cumin
4 sprigs Fresh Parsley
3 lb. Boned Lean Veal Shoulder, trimmed, rolled and tied
1 tsp. Thyme
1 Bay Leaf
4 tsp. Olive Oil

  1. Mix together salt, pepper, cinnamon and cumin.
  2. Rub over roast.
  3. Heat 2 tsp. oil in a large skillet.
  4. Add onions, garlic and tarragon.
  5. Cover and cook over low heat for 10 minutes.
  6. Set aside.
  7. Heat remaining 2 tsp. oil in an ovenproof pan, large enough to hold all ingredients.
  8. Brown meat on all sides.
  9. Add garlic-onion mixture.
  10. Add parsley, thyme and bay leaf.
  11. Cover. Bake in 325 F oven for 1 ? hours, or until meat is tender.
  12. Remove meat to a serving platter.
  13. Skim fat from cooking juices.
  14. Remove bay leaf and parsley.
  15. Slice the roast in ? to ? inch slices.
  16. Pour a little cooking juice over the roast and serve the rest on the side.
